Oven-Barbecued Ribs

4-5 pounds spare ribs
1 tsp. salt
1 small onion, thinly sliced
1 lemon, thinly sliced
1 cup BBQ Sauce

Cut spare ribs into serving sized pieces. Place in large dutch oven, and add water just to cover ribs. Add 1 tsp. salt. Bring ribs to boil, skimming any foam that rises to the top. Reduce heat and simmer for 45 minutes.

Meanwhile, prepare BBQ Sauce. Thinly slice onion and lemon. Spray broiler pan with PAM to ease clean-up. 

Layer ribs in broiler pan, sprinkling onion and lemon slices over the ribs. Baste each layer with BBQ Sauce. Bake at 350 for 45 minutes. Place on platter and serve. 

 

 

Barbecued Baby Beef Ribs

1 3/4 to 2 lbs. baby beef ribs
Basting Sauce:
3 Tbsp. oil
3 Tbsp. chili sauce
2 Tbsp. lemon juice
Dash black pepper
Dash dry mustard

Wipe ribs with wet towel or with damp paper towels. Place ribs in a single layer in a shallow roasting pan. Roast ribs at 450 degrees for about 20 minutes, turning once. Prepare basting sauce. Mix all ingredients together. Remove ribs from oven. Brush ribs with sauce on both sides. Return to oven. Bake at 450 degrees for about 20 minutes longer or until ribs are tender. Baste with remaining sauce from time to time while baking. If ribs start getting too dark, cover with aluminum foil and reduce heat to 400 degrees for the last 10 minutes of baking time.

Tips: This basting sauce is good also for chicken or turkey legs or for ground
meat patties. For higher flavor you may add 2 tablespoons red wine to basting sauce, if desired

BARBECUED RIBS

Ready in 1 hour 30 minutes

½ cup oyster sauce

¼ cup hoisin sauce

¼ cup honey

3 tablespoons lite soy sauce

1 to 2 teaspoons chili paste, if desired

1/3 cup finely chopped green onions

3 ½ to 4 lb. pork spareribs, cut into 6-inch sections

·  GRILL DIRECTIONS: Heat grill. In small bowl, combine all ingredients except spareribs; mix well. Set aside.

·  When ready to grill, place spareribs on gas grill over medium-low heat or on charcoal grill 6 to 8 inches from medium coals. Brush with sauce. Cover; cook 1 to 1 ¼ hours or until meat is tender and starts to pull away from bone, brushing frequently with additional sauce.

·  To serve, cut ribs apart carefully with knife and arrange on platter. Heat any remaining sauce to a boil; serve with ribs.

·  OVEN DIRECTIONS: Heat oven to 350ºF. Prepare sauce as directed above. Line l5xlOxl-inch baking pan with foil; place wire rack in pan. Place ribs on wire rack, meaty side up; brush with sauce.

·  Bake at 350ºF. for 1 to 1½ hours or until meat is tender, brushing frequently with additional sauce. Continue as directed above.

Oven Barbequed Ribs


Servings: 6

Ingredients:

3 pounds spareribs, cut in sections between ribs
2 cups catsup
1 cup chili sauce
1 cup chopped onions
2 cloves garlic, minced
2 tablespoons lemon juice
2 tablespoons lime juice
1/4 cup cider vinegar
2 tablespoons brown sugar
1 tablespoon soy sauce
2 tablespoons pickapeppa sauce
salt and pepper, to taste

Instructions:

Place all ingredients except ribs in a saucepan and bring to a boil. Simmer sauce for 30 minutes until it thickens. Place ribs in a large shallow pan and pour sauce over all. Cover with aluminum foil and bake for 1-1/2 hours at 325 degrees. Uncover; cool enough to skim fat from sauce, and return, uncovered, to oven. Increase heat to 450 degrees and continue baking until ribs are browned and sauce reduced, but don't allow to dry out completely.
